Melon Ball Cocktail


cantaloupe
honeydew melon
watermelon
other melons (optional)
thin sugar syrup

Cut balls from the melons using a melon-ball cutter or a half-teaspoon measure.

Serve very cold, along with or in combination with other fruits. You can sweeten the cocktail by adding thin sugar syrup.

How to make thin sugar syrup: Using a ratio of 3 parts water to 1 part sugar, bring the cold water and sugar to a boil in a saucepan. Turn the heat to low and stir constantly until the sugar dissolves completely and the mixture is clear, approximately 3-5 minutes.

Ham Spread


cooked ham, finely chopped
mayonnaise or salad dressing
chopped dill or sweet pickle relish
pimiento
salt & pepper
stuffed olive slices.

Moisten cooked ham with mayonnaise or salad dressing.  Add a little relish and pimiento.  Season to taste with salt and pepper.

Spread on canape bases and garnish with stuffed olive slices.

Chicken or Turkey Spread

cooked chicken or turkey
mayonnaise or whipped salad dressing
celery or almonds, finely chopped
watercress

Chop or grind cooked chicken or turkey.  Moisten with mayonnaise or whipped salad dressing.  Add finely chopped celery or almonds.  Season to taste.  Garnish with watercress.

Bologna Triangles

The boys and I made these for a Christmas appetizer tray many many many many years ago.




Sandwich 3 slices of bologna, or any other round-shaped cold cuts, using spicy cream cheese filling or finely chopped hard-cooked egg mixed with mayonnaise and pickle.

Wrap in waxed paper and chill.  Cut into pie-shaped wedges.  Secure each wedge with a pick, and if you like, spear a pickled onion on the end of the pick.


This video is of a similar recipe although I think that version is big and sloppy . . . but still it is funny.
